Apple Crisp Recipe:
10 cups NC Sweet Apples, peeled, cored and sliced
1 cup white sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/2 cup water
1 cup quick-cooking oats
1 cup all-purpose flour
1 cup packed brown sugar
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup butter, melted
Prep time: 30min
Cook time: 45min
Preheat oven to 350 degrees
Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
Bake at 350 degrees F for about 45 minutes.
Optional: Top off with a scoop of vanilla ice cream!

Coffee Crusted Cedar Planked Salmon Salad
Spice Rub:
¼ cups                                                Brown sugar, dark
¼ cup                                                  Community® Coffee Dark roast, ground finely
1 tablespoon                                       Old Bay Seasoning
1 tablespoon                                       Chili powder
2 teaspoons                                        Coriander, ground
2 teaspoons                                        Black pepper, course ground
1 teaspoon                                          sea salt
1 teaspoon                                          garlic, powder
9 pounds                                             Salmon, boneless, skinless, portioned into 24 (6 oz.) filets
12 (4” rectangle boards)                     Cedar grilling planks, soaked in cold water for 3 hours
  1. In a large bowl, combine, brown sugar, Community® Coffee, Old Bay, coriander, black pepper, salt and garlic salts
  2. Place the salmon filets on the cedar planks
  3. Coat the salmon pieces completely with the spice rub.
  4. Over a high heat wood grill, place the salmon on the grill. Cover and cook until the spice rub has melted, about seven to ten minutes. Medium rare is a nice choice.
  5. Remove the planks from the grill and loosely cover with foil. Allow them to rest for 10 minutes so that they continue.
16 cups, mixed field greens
12 Roma tomatoes, diced
4 medium cucumber, peeled and sliced thinly
4 cup Balsamic vinaigrette
  1. Toss with salad dressing.
  2. Plate portions and top with grilled salmon
Balsamic Vinaigrette:
4 cup extra virgin olive oil
2 cup Balsamic vinegar
2 teaspoon dried oregano leaves
1 teaspoon granulated garlic
1 teaspoon coarsely ground black pepper
  1. Place vinegars and all dry ingredients in a medium sized bowl
  2. Slowly whisk in the extra virgin olive oil in a steady stream, whisking steadily until an emulsion is formed and the oil is not separated from the vinegar.
  3. Taste and adjust seasoning to taste.
Serve immediately.

Inc. has been making All Natural cheese since 1935.  This year Bunker Hill started producing New Crunchy Cheese Crisps.  These baked crisps are made from 100% Cheese which is high in protein and low in carbs. Coffee & Crepes has been the Triangle's Creperie for over 15 years. Their sweet and savory crepe recipes are simple and sophisticated! CrepeTime Catering has performed over 4300 catered events for groups of 10-400.  And the service is noteworthy for so many reasons. Terri & Andres Pastrana, owners of Coffee & Crepes and CrepeTime Catering, will be presenting Battle of the Brunches: Crepes verses Waffles on the Spotlight Stage on Friday and Sunday at 11:30am.
